They are also one of the easiest legumes to digest. They're easily cooked in 5–20 minutes, which like soaking reduces their antinutrient content.

Lentil dip makes a delisious side for all our Sourdough breads and tortillas. Lentil dip is perfect for a quick weeknight dinner or for school or work lunch. You can also bring it to a barbecue with some quality bread, pitas or baguettes and a bowl of fresh salad. Then you can roast the bread on the grill and serve it with this luscious spread and loads of salad. Super filling and absolutely delicious

Spicy Quinoa Lentil Wraps with Tahini
- Lentil dip
- ½ cup quinoa, rinsed
- 2 ½ cups water, + more as needed
- 2 tablespoons chopped parsley
- ¼ cup tahini
- ½ cup water, + more as needed
- juice of ½ lemon or 1 tablespoon
- pinch of pink salt
- pinch of red pepper flakes
- 1 tablespoon parsley, finely chopped
- shredded cabbage or micro greens
- corn tortillas
- chili paste or sriracha
- sliced avocado (optional)
Lentil-Quinoa Mix, In a medium saucepan, add the water and quinoa, boil, cover and simmer for 20 minutes. Remove from heat, let rest for 10 minutes, and add Lentil dip and mix well. Mixture should be creamy, not dry.
Tahini, In a small bowl, whisk together the tahini, water, lemon, salt, red pepper flakes and parsley. Set aside.
Assembel Corn Tortilla, warm your tortillas, layer with lentil & quinoa mix, micro greens or cabbage, add chili paste and tahini dressing to taste and sliced avocado. Enjoy!
