Rustic Roasted Sandwich
- Fresh pumpkin dip
- 1/2 cup halved cherry tomatoes
- 4 slices sour dough bread, grilled or toasted
- 1 1/2 cups baby arugula
- 3 Tbsp. toasted pumpkin seeds
Roast Cherry tomatoes for 5 to 10 minutes until tomatoes are softened golden and tender. Spread Pumpkin dip on roasted Sour dough bread. Evenly top 2 slices with tomatoes and arugula and sprinkle with pumpkin seeds, then top with remaining bread. Enjoy!
