    What is Veganism?

     

    Veganism is a lifestyle that excludes all animal products and attempts to limit the exploitation of animals as much as possible. People often confuse being a Vegan to the Vegetarian way of eating. Those who chose to be Vegans avoid meat, poultry and seafood, just like vegetarians, but they take this a step ahead by also refraining from consuming dairy products like milk, cream and eggs; honey or any product/by-product derived from animal/animal skin. While most vegetarians would enjoy dishes made using paneer and cream, vegans will depend on other sources of protein which will be non-animal based.  Pea Paneer is answer to their restrictive meal planning and a keen attention towards wholesome nutrition which makes a vegan lifestyle possible. 

     

    The Secrets to Making Peas Paneer Taste Authentic.

     

    • Enjoy it either pan fried in a salad, grated onto a pizza or cooked into your favourite curry.
    • Miso Paste, can be helpful in bringing a more authentic flavor to vegan cheese

    • Dijon Mustard, smooth Dijon mustard is preferable to the whole grain variety. Dijon mustard’s sharp flavor can be especially useful when making vegan cheese. 

    • Lemon Juice,  A squeeze of lemon juice brings that slightly sour flavor that you get from dairy-based cheeses. 

    • Garlic and Onion,  sautée about a quarter of a minced onion and a few minced garlic cloves and adding it to the ingredients.

    • Red Bell Pepper, blending red bell pepper into vegan cheeses and cheese sauces enhances flavor.  Roast it beforehand to further deepen the flavor!

    • More Fermented Food,  try adding a splash of the liquid from a jar of  any fermented vegetables you have in your fridge. 

     

     

    Pea Paneer Stir-Fry

    INGREDIENTS

     

    Spices:

     

     

      • 1 Slab Peas Paneer
      • 1 medium red onion sliced
      • Medium bell peppers sliced, mushrooms, baby corn, broccoli etc. Veges of your choice.
      • 1 bunch spring onions chopped
      • 1 tbsp ginger chopped
      • 2 tbsp garlic chopped
      • 5-6 fresh green chilis sliced
      • 3 tbsp Sriracha sauce or any chilli sauce
      • 1 tbsp tomato ketchup
      • 1 tbsp soy sauce
      • 1 tsp vinegar
      • 2 tsp chilli flakes
      • 2 tsp black pepper crushed
      • 2 tbsp cornflour
      • 4 tbsp oil
      • salt to taste

     

    INSTRUCTIONS

      • Cut the Peas Paneer in 1 inch long and thick strips, 
      • Mix the cornflour with a tsp of salt, pepper and chilli flakes. Dab the Peas paneer lightly in this and pan fry, in 2 tbsp oil, until it gets a golden brown crust. Set aside when done.
      • Heat a wok with the remaining oil and add the chopped ginger, garlic and chilis.

      • When these turn fragrant, add the onion and fry until it turns pink, on a high flame

      • Add the bell peppers,Veges of your choice, spring onion whites along with salt, pepper and remaining chili flakes. Saute for 3-4 minute

      • Add all the sauces and vinegar, mix well and cook for a minute.

      • Add the fried paneer and spring onion greens. Fry for 4-5 minutes. Switch the flame off.

      • Garnish with some spring greens and serve the paneer chili garlic stir fry immediately. Enjoy!
